Ingredients
For the Salmon Rolls:
6 oz salmon filet
1/4 cup soy sauce or coconut aminos
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp cracked black pepper
1/2 tsp ground ginger
1/2 tsp salt
1 tsp Sriracha
1/2 cup sticky rice (follow cooking instructions)
1/2 cucumber, sliced thin (lengthwise)
6 green onions, halved
1 avocado, sliced thin
6 sheets nori paper, cut in half
Peanut Dipping Sauce:
1 tsp peanut butter
1 tsp grated garlic
1/2 tsp grated ginger
3 tbsp soy sauce
1 tsp sesame seeds
1/2 tsp Sriracha
Instructions
1. Marinate the Salmon
In a bowl, whisk together soy sauce, garlic powder, onion powder, smoked paprika, pepper, ginger, salt, and Sriracha. Add salmon and let marinate for 15–30 minutes in the fridge.
2. Air Fry the Salmon
Preheat air fryer to 400°F. Cook salmon for 7–10 minutes, depending on thickness, until fully cooked and flakey. Once done, shred with a fork and mix with a touch more Sriracha if desired.
3. Cook the Sticky Rice
Prepare sticky rice according to package instructions. Set aside to slightly cool before rolling.
4. Prep the Veggies
Thinly slice cucumber, avocado, and green onions. Cut each nori sheet in half to make 12 mini sheets.
