Ingredients

For the Salmon Rolls:

  • 1/4 cup soy sauce or coconut aminos

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp cracked black pepper

  • 1/2 tsp ground ginger

  • 1/2 tsp salt

  • 1 tsp Sriracha

  • 1/2 cup sticky rice (follow cooking instructions)

  • 1/2 cucumber, sliced thin (lengthwise)

  • 6 green onions, halved

  • 1 avocado, sliced thin

  • 6 sheets nori paper, cut in half

Peanut Dipping Sauce:

  • 1 tsp peanut butter

  • 1 tsp grated garlic

  • 1/2 tsp grated ginger

  • 3 tbsp soy sauce

  • 1 tsp sesame seeds

  • 1/2 tsp Sriracha

Instructions

1. Marinate the Salmon

  • In a bowl, whisk together soy sauce, garlic powder, onion powder, smoked paprika, pepper, ginger, salt, and Sriracha. Add salmon and let marinate for 15–30 minutes in the fridge.

2. Air Fry the Salmon

  • Preheat air fryer to 400°F. Cook salmon for 7–10 minutes, depending on thickness, until fully cooked and flakey. Once done, shred with a fork and mix with a touch more Sriracha if desired.

3. Cook the Sticky Rice

  • Prepare sticky rice according to package instructions. Set aside to slightly cool before rolling.

4. Prep the Veggies

  • Thinly slice cucumber, avocado, and green onions. Cut each nori sheet in half to make 12 mini sheets.

5. Assemble the Hand Rolls

  • Take one half-sheet of nori. Add a small spoonful of rice, top with shredded salmon, avocado, cucumber, and green onion. Roll into a cone shape and press gently to seal.

6. Make the Peanut Sauce

  • In a small saucepan or microwave-safe bowl, combine all sauce ingredients. Warm briefly and stir until smooth.

7. Serve & Enjoy

  • Serve the hand rolls fresh with a side of warm peanut sauce for dipping.

Helpful Tips

  • No sticky rice? Sushi rice or short grain white rice will work too.

  • Seal your rolls by dabbing the edge of the nori with water if needed.

  • Make it gluten-free by using coconut aminos and gluten-free soy sauce.

  • Add crunch: Top with fried onions or sesame seeds before rolling.
